Tomato Soup with Egg

What you Need


1 large red onion

3 cloves of garlic

8 large tomatoes

70 grams of tomato puree

2 table spoons of chilli paste

500 ml of chicken stock

1 tea spoon of sugar

olive oil

salt and pepper for seasoning


one egg per person

What to do


  1. Heat up a pot with some olive oil
  2. Finely chop the onion and add to the pot.
  3. Add chopped garlic and chilli paste to the pot, a couple of minutes after the onion.
  4. Chop the tomatoes medium size and add the tomatoes and the tomato puree to the pot.
  5. Add some sugar, salt and pepper for seasoning.
  6. Add the chicken stock, cover the pot with a lid and let the soup simmer for 20-30 minutes.
  7. Use a hand blender to puree the soup.
  8. Boil an egg for 5 minutes for perfect egg yolk
